Toto, I Have the Feeling We're Not in SoCal Anymore
If you've worked any kitchen in Southern California you'll notice something about all the back of the house (the people working in the kitchen) staff: majority are of Hispanic origins. Knowing Spanish is an absolute MUST.
One HUGE difference between a back of the house staff here in Silverdale, Washington and in the handful of restaurants I've worked in Southern California...
...they're 99% Caucasian. It was trippy to not have to use my Spanglish. They're all so super nice.
